Ingredients:

Directions:

  1. Wash potates well.
  2. Drizzle with some olive oil and sprinkle with some salt.
  3. Bake at 350° until tender, about 30-45 minutes.
  4. Let potatoes cool.
  5. Cut potatoes into quarters.
  6. In a bowl, combine all other ingredients.
  7. Add potatoes.
  8. Place into a shallow baking dish and broil about 4-inches from heat until golden brown.
  9. Serve hot.
