Country-Style Baked Ham and Potatoes

Ingredients:

Directions:

  1. Grease a 1 1/2 quart baking dish.
  2. Saute' onion in butter until soft but not browned.
  3. Place half of the potatoes in a thin layer in the bottom of the baking dish.
  4. Cover with half the onion.
  5. Place ham on top. spread with mustard.
  6. Cover with remaining onion. Sprinkle with salt and pepper.
  7. Cover with potatoes. Add broth.
  8. Bake at 350F for about 40 minutes.
  9. Add half and half. Sprinkle cheese on top.
  10. Continue baking at 375F until potatoes are tender and cheese is melted, about 15 minutes.
  11. Sprinkle with parsley. Serve immediately.
