Ingredients:

  • 1 large sweet potato
  • 1 -2 onion
  • 3/4 cup butter or 3/4 cup margarine , which ever you like
  • you decide on how buttery you like you potato
  • if using garlic salt taste before putting in extra salt

Directions:

  1. 1.Chop both Sweet potato(peel first - I do) and Reg. potatoes(peel if you like I don't) into med. Chunks.
  2. 2.Bring potatoes to a boil in a Lrg. Boiling pan or until they are soft but not to soft, we don’t want mashed potatoes.(would suggest to start reg. potatoes about 5 min before sweet potatoes they seem to take longer.).
  3. 3.In a Frying pan take the onion and 1/4 a stick of butter and fry onions till tender and slightly browned.
  4. 4.Now that Potatoes are done drain completely.
  5. 5.Add the remaining Butter to the drained potatoes stir and even coat all potatoes with the butter.
  6. 6.Add the fried onions to the Potatoes and mix.
  7. 7.Finally add the Salt, Pepper, Parsley, **Garlic powder or Salt** To your taste….Everyone is different when it comes to seasoning food so that why I don’t have specific measurements.
  8. 8.Mix well and EAT!
