Ingredients:

Directions:

  1. Preheat oven to 350 degrees F.
  2. Melt butted in a 10-inch oven-proof skillet.
  3. Add potatoes and onions and cook, covered over medium heat about 15 minutes until tender and lightly browned, stirring occasionally.
  4. Beat together eggs, salt, pepper, and milk; stir in 3 Tbs parsley and 1/2 cup cheese.
  5. Pour egg mixture over potatoes; sprinkle with ham.
  6. Bake for 20 minutes or until eggs are set.
  7. Sprinkle remaining 1/2 cup cheese over eggs; return to oven for about 2 minutes until cheese is melted.
  8. Remove from oven and garnish with parsley.
  9. Cut into wedges to serve.
