Cottage Cheese Veggie Pilaf

Ingredients:

Directions:

  1. Boil the mixed vegetables in 1 cup of warm water for 5 minutes.
  2. Pour oil in a heavy bottomed pan.
  3. Add onions and saute until browned.
  4. Add tomatoes and cook until soft.
  5. Add this to the ground masala paste, the powdered masalas and salt.
  6. Cook for 5 minutes.
  7. Add the boiled veggies and cottage cheese.
  8. Cook on simmer until the oil separates.
  9. Mix the chopped corriander into the veggies.
  10. Parboil the soaked rice in lots of water with salt.
  11. Strain rice and lay it on top of the cooked veggies.
  12. Mix the saffron and food colour in milk.
  13. Splash this saffron milk on the rice.
  14. Sprinkle crisp onion on the last layer.
  15. Close the pan with a lid tightly.
  16. Cook on simmer for 25 minutes.
  17. Serve this pilaf with a salad of your choice!
