Ingredients:

  • 11/2 cup cornmeal
  • 11/2 cup buttermilk
  • 1 cup sugar
  • 11/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • i am not to sure how many muffins this recipe makes. its been a while since i have made them and as with most of the old recipe's i have i didn'tsp copy down the qu a ntity.

Directions:

  1. Combine cornmeal and buttermilk; let stand for 10 minutes.
  2. In a large bowl combine the dry ingredients; stir in cornmeal mixture, eggs and melted butter. Stir until just blended.
  3. In paper lined muffin tins spoon batter half way up muffin cups; add a spoonful of jam then cover with more batter.
  4. Bake at 400F 20-25 minutes.
