Bluberry Jam Filled Muffins

Ingredients:

  • 3/4 cup cake flour (3 oz/84g)
  • 3/4 tsp baking powder
  • 1/8 tsp salt
  • 1/4 cup butter (2 oz/56g)
  • 1/2 cup sugar (3-1/2 oz/105g)
  • 1 egg
  • 1/4 cup milk (2 fl.oz)
  • topping

Directions:

  1. Sift flour with baking powder and salt. Cream butter. Gradually add sugar, creaming well after each addition.
  2. Stir in vanilla and egg. Beat well. Add flour mixture alternately with milk, beating well after each addition until smooth.
  3. Spoon batter into greased and floured muffin pans, filling 2/3 full. Place 1/2 tablespoon of blueberry jam on the center of each muffin and press lightly into batter. Bake 25 minutes at 375 degrees. (190C/gas mark 5) Cool in pan for 10 minutes. Decorate
  4. With small dollops of jam and sprinkle some Almonds of each muffin. Makes 8 to 12
