Cornmeal and Cumin Pork Loin

Ingredients:

Directions:

  1. Season pork with salt and pepper.
  2. Mix cornmeal and cumin together.
  3. Turn pork in this mixture to coat.
  4. Heat oil in a skillet til hot but not smoking.
  5. Brown pork, turning, about 3 minutes.
  6. Transfer pork to a roasting pan.
  7. Roast at 350°F for 25 to 30 minutes until internal temperature registers 155°F.
  8. Let stand 10 minutes loosely covered.
  9. Slice and serve.
