Cornish Game Hens With Dijon Walnut Sauce

Ingredients:

Directions:

  1. Rub hens inside and out with garlic.
  2. Sprinkle inside and out with lemon juice.
  3. Bake in 400ºF oven 1 hour or until tender.
  4. Remove hens to warm. platter.
  5. Stir flour into drippings in pan.
  6. Cook 2 to 3 minutes.
  7. Combine mustard, broth, wine and honey.
  8. Gradually add to flour mixture, stirring constantly.
  9. Bring to boil.
  10. Mix in nuts.
  11. Split hens.
  12. Place on bed of wild rice.
  13. Spoon sauce over all.
  14. Garnish with fresh strawberry and kiwi, if desired.
