Corn and Zucchini Salad

Ingredients:

  • 2 (16 oz) packages frozen corn, thawed
  • 2 (4 oz) cans choppped greeen chilies, drained
  • 1 medium onion, chopped
  • 2/3 cup olive oil
  • 2 -2 1/2 tsp ground cumin
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 tsp garlic salt

Directions:

  1. In a bowl, toss corn, zucchini, red pepper, chilies and onion.
  2. In a jar with tight-fitting lid, combine remaining ingredients; shake well.
  3. Pour over the salad and stir gently.
  4. Chill for several hour or overnight.
