Corn And Avacado Salad

Ingredients:

  • 4 ears of corn (shucks on if you use open fire, shucks off if you use a grill)
  • 1 tabs olive oil
  • 1/2 sea salt (course grain)

Directions:

  1. If using an open fire to roast corn, soak ears with shucks on for 15 minutes.
  2. Lay corn in hot coals, turning once after 10 minutes, removing after another 10 minutes.
  3. If using a grill, shuck corn husks off of corn, place on hot grill at medium-high heat.
  4. Grill rotating often until all sides are slightly charred, total of about 15 minutes.
  5. Allow corn to cool in order to touch.
  6. Carefully cut corn off of corn cob
  7. Gently toss with avocado, cilantro, lime juice, olive oil, and salt.
  8. Serve room temperature
