Ingredients:

Directions:

  1. Peel ribbons off each vegetable/fruit until you have about 1/2 cup worth. Try to get long, even peels by applying even pressure with your peeler down the length of the veggie.
  2. Place ribbons on some paper towels and salt lightly. Allow to sit about 10 minutes
  3. Pat dry and toss ribbons with cabbage in a bowl. Dress with fresh lemon juice and garnish with chopped, fresh herbs and crumbled goat cheese. Season to taste with salt and pepper.
