Colorful Ribbon Salad

I saw Giada-head or someone make this on tv. Kinda. All I remember is that she used ribbons of vegetables to create a slaw/salad and so here's my spin on it. Boofie-fied.
Ingredients:
1 carrot, washed and peeled
1 seedless cucumber, washed and peeled
1 yellow or green squash, washed and peeled
1 apple, washed and peeled
1 cup finely shredded red cabbage
1 lemon
chopped rosemary, basil, mint, whatever
crumbled goat cheese
course salt and pepper to taste
Directions:
1. Peel ribbons off each vegetable/fruit until you have about 1/2 cup worth. Try to get long, even peels by applying even pressure with your peeler down the length of the veggie.
2. Place ribbons on some paper towels and salt lightly. Allow to sit about 10 minutes
3. Pat dry and toss ribbons with cabbage in a bowl. Dress with fresh lemon juice and garnish with chopped, fresh herbs and crumbled goat cheese. Season to taste with salt and pepper.
