Ingredients:

  • 1 cup milk
  • 2/3 cup sugar
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 2 cups sifted flour

Directions:

  1. Preheat oven to 375°F.
  2. Beat egg and milk; add shortening, sugar, salt, cinnamon, lemon juice, and vanilla extract.
  3. Sift flour and baking powder; fold together until just mixed.
  4. Fold in peaches and fill greased muffin tins 2/3 full.
  5. Bake about 20 minutes.
