Cilantro-Lime Chicken With Fresh Salsa

Ingredients:

Directions:

  1. Finely dice onion and tomatoes (use food processor if necessary).
  2. Zest lime into separate bowl.
  3. Add lime juice to onion and tomato mix.
  4. Chop peppers into small pieces, leaving in veins and seeds for hotness.
  5. Melt butter in frying pan. Add chicken and a pinch of cilantro.
  6. Mix remaining cilantro into salsa.
  7. Add tequila to pan. As chicken browns, add lime zest to pan and stir.
  8. Serve chicken. Spoon salsa on top.
