  1. First use a skillet that can go on top of the stove as well as in the oven. In skillet brown chorizo and drain off access fat and set aside. Warm skillet and add 1 diced green peppers cook til tender then add potatoes and onions to skillet and lightly brown. Add chorizo back to skillet and mix together with the beaten eggs. Top with mozzarella cheese and back in oven on 350 degree's until cheese is slightly brown and melted - .
