Ingredients:

  • 1 cup confectioners'' sugar
  • 1/4 cup peanut butter
  • 1 cup sugar
  • 1/3 cup flour
  • 2 tbsp cocoa
  • 1/4 tsp salt
  • 2 cups milk
  • 2 tbsp butter
  • 1 tsp vanilla

Directions:

  1. Combine confectioners’ sugar with peanut butter, mix until crumbly. Pat in bottom of baked pie shell reserving a small amount for garnish. Pour chocolate filling over peanut butter mixture. When completely cooled, top with whipped cream. Garnish with remaining peanut butter mixture and chocolate chips.
  2. Chocolate filling: In heavy saucepan, combine sugar, flour, salt and cocoa. Slowly add milk. Cook over medium heat until thickened and bubbly. Reduce heat. Cook and stir 2 minutes (longer if needed). Beat egg yolks slightly. Gradually stir 1 cup of the hot mixture into egg yolks. Return egg mixture to saucepan. Bring to a gentle boil. Cook and stir 2 minutes more. Remove from heat. Stir in butter and vanilla.
