Ingredients:

  • 3 oz butter
  • 2 tbsp sugar
  • 3/4 cup plain flour
  • 1 tbsp cornflour
  • 1/2 tsp vanilla
  • 2 cups coconut
  • 1 egg
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 3/4 cup milk
  • 1 1/2 cups icing sugar
  • 2 tbsp cocoa
  • 1 oz butter
  • 1 tbsp water

Directions:

  1. Base: Cream butter and sugar, add vanilla, then sifted dry ingredients,mix well.
  2. Press mixture over base of 30cm x 20cm tray.
  3. Bake in moderate oven 20 minutes.
  4. Remove, spread evenly with coconut filling.
  5. Return to oven, bake further 25 minutes.
  6. Filling: Combine dry ingredients in bowl, add combined beaten egg, milk and vanilla, mix well.
  7. Remove from oven, stand 5 minutes, top with icing, cut into bars when cold.
  8. Icing: Sift icing sugar and cocoa into bowl, add softened butter and water, beat until smooth.
