Chive and Potato Scones

Ingredients:

  • 1 lb potato
  • 1 cup flour , sifted
  • 2 tbsp olive oil
  • salt and pepper

Directions:

  1. Cook the potatoes in a saucepan of boiling salted water for 20 minutes. Drain thoroughly. Return the potatoes to the clean pan and mash them.
  2. Preheat a frying pan over low heat.
  3. Tip the hot mashed potatoes into a bowl. Add the flour, olive oil and chives. Season to taste with salt and pepper. Blend to make a soft dough.
  4. Roll out the dough on a well floured surface to 1/4 inch thick.
  5. Cut into 2-inch circles, re-rolling and cutting the trimmings.
  6. Cook the scones, in batches, on the frying pan for about 10 minutes until they are golden brown.
