  1. In a large Dutch oven, heat oil over medium flame until it shimmers. Add ribs and brown on all sides, 3-5 minutes.
  2. Add remaining ingredients, bring to a boil, reduce to simmer, cover and cook 45 minutes. Check occasionally, and add a little water if it appears to be drying out (it shouldn't).
  3. Remove the lid and skim off any excess fat. Continue cooking until the sauce is reduced to a thick, sticky glaze, 10-15 minutes. Watch carefully, stirring occasionally, to be sure it doesn't burn.
