Chicken Pilaf

Ingredients:

  • 2 tbsp margarine
  • 2/3 cup rice
  • 1 1/3 cups water
  • 1/4 cup raisins
  • 2 tbsp parsley
  • 1/2 tsp salt

Directions:

  1. Brown chicken in margarine.
  2. Salt and pepper the chicken.
  3. Remove chicken.
  4. Cook rice and onion in the drippings.
  5. Stir in remaining ingredients.
  6. Bring to a boil.
  7. Place rice mixture in a casserole dish.
  8. Top with chicken.
  9. Cover with foil.
  10. Bake at 375* for 45 to 50 minutes.
