Skillet Chicken Pilaf

Ingredients:

  • 3 lbs chicken pieces
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 cup rice
  • 2 3/4 cups chicken broth
  • 0.5 (6 oz) can tomato paste

Directions:

  1. Sprinkle chicken with salt and pepper.
  2. Heat oil in large skillet over medium heat; add chicken to skillet.
  3. Cook, turning once, until browned about 5 minutes per side.
  4. Remove from skillet.
  5. Add onions to skillet; cook, stirring occasionally, until tender, about 5 minutes.
  6. Add rice and cook, stirring, until grains are translucent, about 3 minutes.
  7. Meanwhile, bring chicken broth to a boil in a medium saucepan.
  8. Add broth and tomato paste to skillet; stir well.
  9. Arrange chicken on top of rice mixture. Reduce heat to low.
  10. Cook covered, until rice has absorbed liquid and juices run clear when meat is pierced with knife, about 25 minutes.
  11. Serve hot.
