Ingredients:

  • 1 1/2 lbs chicken breasts or 4 boneless skinless chicken breast
  • 3 tbsp flour
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 1/3 cup chicken broth
  • salt and pepper
  • 8 slices lemons

Directions:

  1. Warm a platter in a 200-degree oven.
  2. Flatten chicken breasts between two pieces of wax paper.
  3. Sprinkle with salt and pepper.
  4. Shake in a bag with 3 tablespoons flour.
  5. Heat olive oil and butter in a skillet over moderately high heat.
  6. Cook chicken 3 minutes on each side until browned.
  7. Remove to warm platter.
  8. Add chicken broth to skillet and stir to release the brown bits.
  9. Increase heat to high, add lemon juice and lemon slices (add some capers if desired).
  10. Cook about 2 minutes until sauce is slightly syrupy.
  11. Pour sauce over chicken.
  12. Garnish with chopped parsley, if desired.
