Chicken Pasta Salad

Ingredients:

  • 1 bag of multicolored twisty pasta (any 12 to 16 oz bag of pasta works).
  • 1/2 to 1 red onion (depending on strength of flavor)
  • 1 medium can of sliced black olives
  • salt & pepper to taste

Directions:

  1. If you haven't cooked the chicken yet, I recommend thyme, salt, pepper and chicken flavor in water to boil until done. Then cut them up in desired sized bites.
  2. Cook the pasta
  3. While the pasta cooks, dice the onion and celery and put in a large bowl along with the olives.
  4. Add the chicken after it has cooled a bit
  5. Drain the pasta (rinse in cold water if desired) and add to contents of bowl. Mix up well.
  6. Add Mayonnaise, salt and pepper to taste.
  7. Best is to let it refrigerate for a few hours for the flavor to really develop, however, it never seems to last that long in my house. Also, for a family of 5, there are leftovers for several of us the next day.
