While this is cooking, shred barbecue chicken until you have all the boneless meat, cut into bite size pieces if not already so. If preferred, keep stuffing, break up into small pieces and reserve in a small bowl.
Remove corn from cobs with a sharp knife and set aside with the chicken.
When pasta has cooked, drain and set aside to cool.
Prepare the dressing - in a bowl, combine minced garlic, olive oil, juice from the lemons and and coriander leaves.
Combine chicken, stuffing, pasta, corn (and any other optional ingredients) and toss with salad dressing.
Serve with fresh green salad. Makes a great side or good comfort food as a main.
