Ingredients:

  • 2/3 cup milk
  • 1 tsp salt
  • 6 tbsp flour
  • 6 tbsp cornmeal
  • 1 tsp paprika
  • 1/4 cup butter

Directions:

  1. Combine milk, peanut butter and salt. Mix until smooth.
  2. Combine flour, cornmeal and paprika.
  3. Melt butter in foil-lined 13x9x2 baking dish.
  4. Dip chicken in peanut butter mixture, then coat with flour mixture.
  5. Place chicken in single layer skin side up in melted butter.
  6. Bake uncovered at 425 degrees for 30 minutes.
  7. Turn chicken and bake 20 minutes longer or until done.
