  1. Preheat oven to 350°.
  2. In a bowl, mix the chicken, cheeses, chiles, onions, bell pepper, and olives together; taste and add salt and pepper, if needed).
  3. Spread mixture evenly on the tortillas, almost to the edge.
  4. Roll up, wrap in plastic wrap, and refrigerate 1 hour or longer.
  5. Cut the rolled tortillas into 3/4-inch slices and serve at room temperature or place on a baking sheet and bake about 6 minutes, or until warmed-serve immediately.
