Ingredients:

Directions:

  1. In a bowl, combine flour and baking powder; cut in butter and shortening until mixture resembles coarse crumbs.
  2. Gradually add water, tossing with a fork until dough forms a ball.
  3. Roll out into a 14-in. circle.
  4. Place on an ungreased 12-in. pizza pan.
  5. Flute edges to form a rim; prick bottom of crust.
  6. Bake at 350 degrees for 15 minutes.
  7. In a mixing bowl, beat cream cheese and sugar until smooth.
  8. Beat in eggs and vanilla.
  9. Stir in nuts.
  10. Spread over crust.
  11. Bake 10 minutes longer.
  12. Cool.
  13. Drain cherries, reserving 1/3 cup juice.
  14. Set cherries and juice aside.
  15. In a saucepan, combine sugar and cornstarch; stir in reserved juice until smooth.
  16. Add cherries.
  17. Cook and stir over medium heat until mixture comes to a boil.
  18. Cook and stir 2 minutes longer.
  19. Remove from the heat; stir in butter, extract and food coloring.
  20. Cool to room temp.; spread over cream cheese layer.
  21. Garnish with whipped cream, if desired.
  22. ****At times I substitute cherry pie filling for the cherries, then add the butter and almond extract to this while it is heating.
