Ingredients:

Directions:

  1. Brush 1 side of each tortilla with butter. Place tortillas onto cutting board, buttered-side down.
  2. To assemble quesadillas, sprinkle unbuttered side of each tortilla with 1/3 cup cheese. Layer each with 1/2 cup chicken, 1/4 cup black beans and 2 tablespoons tomatoes. Top each with 1/3 cup cheese. Fold tortillas in half.
  3. Heat 12-inch skillet or griddle over medium heat. Cook each quesadilla, turning once, until lightly browned (3 to 4 minutes).
  4. Cut each into 3 wedges. Serve with toppings as desired.
