Ingredients:

Directions:

  1. Cook bacon in skillet, drain off grease and set aside. Dice peppers and onions. Mix potatoes, peppers, onion, chicken soup, sour cream, chicken broth, and 1 cup cheese together in a bowl.
  2. Grease or Spray 2 qt casserole dish. Put potato mixture in dish, sprinkle remaining cheese on top. Crumble bacon and put on top. Bake in 350 degree oven for about 45 minute.
