Cheese and Broccoli Topped Chicken

Ingredients:

Directions:

  1. Preheat oven to 375°F.
  2. Blanch the broccoli in boiling salted water for 3 minutes - drain and rinse under cold running water and set aside.
  3. Arrange chicken on a foil-lined baking sheet and season with salt and pepper.
  4. Combine mayo, mustard and stir in the broccoli, green onion and 1/2 cup of the cheese.
  5. Spread an equal portion of the mixture onto each breast.
  6. Bake for 15 to 17 minutes.
  7. Sprinkle with remaining cheese and all the almonds.
  8. Broil for 1 or 2 mins, until nuts are browned and cheese is bubbly.
  9. Serve with rice or sweet potato fries.
