Can't get enough of that Sobey's catalogue! I pulled this from them last month and served it to company, who raved about it! This meal is specifically made from frozen items for those days when you've just not thought far enough ahead to plan dinner. The recipe calls for
Ingredients:
2 cups broccoli, frozen
4 chicken breasts, boneless, skinless, frozen
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup light mayonnaise
1 tablespoon dijon mustard (or 1 tablespoon mustard and 1 tsp frank's chili and lime)
1 green onion, finely chopped
3/4 cup old cheddar cheese, light, shredded, divided
2 tablespoons almonds, sliced
Directions:
1. Preheat oven to 375°F.
2. Blanch the broccoli in boiling salted water for 3 minutes - drain and rinse under cold running water and set aside.
3. Arrange chicken on a foil-lined baking sheet and season with salt and pepper.
4. Combine mayo, mustard and stir in the broccoli, green onion and 1/2 cup of the cheese.
5. Spread an equal portion of the mixture onto each breast.
6. Bake for 15 to 17 minutes.
7. Sprinkle with remaining cheese and all the almonds.
8. Broil for 1 or 2 mins, until nuts are browned and cheese is bubbly.
9. Serve with rice or sweet potato fries.
