Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp cardamom
  • 1/4 tsp allspice
  • 1 pinch ground pepper
  • 1 1/2 cups milk
  • 1 egg

Directions:

  1. Heat oven to 200°F.
  2. Mix together the dry ingredients in a large bowl.
  3. Mix the wet ingredients (milk, egg, and vegetable oil) together then add to the bowl with the dry ingredients.
  4. Mix together until mostly combined. Let sit for 2-3 minutes.
  5. Heat a fry pan over medium low heat and add a bit of oil to the fry pan and add 1/4 cup of batter for each pancake.
  6. Let cook until the edges begin to appear dry. Flip and cook on the other side until both sides are golden.
  7. Place pancakes on a baking sheet in the oven to keep warm until all pancakes are cooked.
  8. Serve with maple syrup.
