Ingredients:

Directions:

  1. Bring 2 inches water to a boil in a large saucepan. Put in the cauliflower florets, bring back to a boil, cover and cook for 5-7 minutes, until the cauliflower is tender. Drain well.
  2. Put the cauliflower into a food processor with the butter or olive oil, soy milk and salt and pepper and grated nutmeg if using. Whiz until you get a smooth, thick consistency.
  3. Return to the saucepan and gently reheat, stirring so that it doesn't catch, then serve.
