  1. Preheat oven to 350 degrees. Steam carrot, covered, 15 minutes or until tender.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add onion and ginger; saute 7 minutes or until golden.
  3. Combine the carrot, onion mixture, lentils, and the next 4 ingredients (lentils through egg) in a food processor, and process until smooth. Combine carrot mixture, oats, breadcrumbs, walnuts, and salt in a large bowl. Spoon mixture into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350 degrees for 45 minutes.
