Ingredients:

  • 2 cups sugar
  • 1 1/2 oil
  • 1 cup chopped walnuts (optional)
  • 1 cup raisins (optional)
  • 3 tsp cinnamon
  • 4 eggs
  • 1 tsp salt
  • 2 cups flour

Directions:

  1. Combine dry ingredients in a samll bowl.
  2. In a large mixing bowl cream together eggs and sugar add oil Slowly add dry ingredients and blend together well.
  3. Add carrots, nuts and rasins.
  4. Bake in a greased and floured pan on 300 for 35-45 min.
  5. Watch carefully after the first 35 min until center of cake comes out clean with a toothpick.
  6. Top with a cream cheese frosting and enjoy.
