  1. Grease and line three 9-inch round baking tins.
  2. Sift together flour, baking powder, soda, salt and cinnamon.
  3. In a large bowl, blend together sugar, oil and eggs. Gradually add flour mixture to the sugar mixture, blending well. Tnen add the carrots, drained pineapple, nuts, and coconut; blend thoroughly.
  4. Turn into greased pans.
  5. Bake at 350F for 45 minutes and test for doneness. Cool a few minutes before removing from pans.
