Carrot And Coconut Muffins-wholesome Goodness

Ingredients:

  • 1 large carrot (scrubbed and grated finely)
  • 3 cups flour
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 2 eggs
  • 3/4 buttermilk or add a a tbsp of lemon juice to normal milk and allow to stand for 5 minutes as an alternative
  • 2 table spoons vanilla essence

Directions:

  1. Place all the dry ingredients in a large bowl and sift
  2. Beat the eggs, vanilla essence and oil together in a separate bowl until creamy
  3. Make a well in the dry mixture
  4. Pour the egg mixture in the well and mix
  5. Add the carrot and coconuts and mix well
  6. Pour in the butter milk and mix to incorporate all the ingredients
  7. Place in a greased 12 pan muffin tray
  8. Bake on middle rack of the oven at 180-220 degrees Celsius for about 30-35 minutes or until golden brown and toothpick comes out dry when inserted
  9. Allow to cool in tray and gently loosen the edges
  10. Enjoy warm on its own or with whipped cream and jam
