Ingredients:

Directions:

  1. Soak rice for 3-6 hours then drain well and cook according to package directions then cool to room temperature.
  2. When rice is ready finely chop the onion, tomatoes and peppers and grate the coconut.
  3. Mix together in a large bowl and add in the rice.
  4. In a separate bowl mix the almond yogurt, lime juice, lime zest, garlic, spices and seasoning.
  5. Pour over the wild rice and vegetables and toss well.
