Bulgur Pilaf With Apricots and Raisins

Ingredients:

Directions:

  1. In nonstick skillet, melt margarine over medium heat; cook onion, stirring, until softened.
  2. Stir in bulgur and cook, stirring for 1 minute.
  3. Stir in raisins, apricot, stock powder, and boiling water.
  4. Cover and simmer over low heat for 15 minutes or until liquid is absorbed.
  5. Stir in parsley, season with pepper to taste.
