  1. Place bread on baking sheet, in single layer. Drizzle with small amount of olive oil. Bake in 400 degree oven until lightly browned on one side. Turn bread over and repeat olive oil, and cook for a few minutes until lightly browned.
  2. Note: If you want to grill your bread over an open flame or on a stovetop grill pan, that is great. Either method works perfectly well. The objective is to have grilled bread that has been drizzled with olive oil to help in the browning.
  3. When bread has been baked or grilled, rub both sides (generously) of bread with cut side of a garlic clove. Set aside.
  4. In small bowl, place tomatoes and basil. Drizzle well with olive oil and sprinkle with kosher salt. Add small sprinkle of peperoncino (crushed red pepper) if desired. Mix well.
  5. Top each piece of bread with substantial layer of tomato and basil mixture. Drizzle with additional olive oil and serve immediately.
