Brown Sugar-Glazed Sweet Potatoes With Marshmallows

Ingredients:

  • 4 lbs sweet potatoes, peeled , cut into 1-inch pieces (yams)
  • 2/3 cup golden brown sugar , packed
  • 5 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1 pinch ground ginger
  • 2 cups miniature marshmallows

Directions:

  1. Preheat oven to 375ºF.
  2. Arrange potatoes in 13x9x2-inch glass baking dish.
  3. Combine sugar, butter, cinnamon, salt, nutmeg and ginger in heavy small saucepan over medium heat.
  4. Bring to boil, stirring until sugar dissolves.
  5. Pour over potatoes; toss to coat.
  6. Cover dish tightly with foil.
  7. Bake potatoes 50 minutes.
  8. Uncover; bake until potatoes are tender
  9. And syrup thickens slightly, basting occasionally, about 20 minutes.
  10. (Can be prepared 1 day ahead. Cool; cover and refrigerate. Rewarm potatoes in 350ºF oven until heated through, about 20 minutes, before continuing).
  11. Increase oven temperature to 500ºF.
  12. Top potatoes with marshmallows
  13. And nuts.
  14. Return to oven; bake until marshmallows begin to melt and nuts begin to brown, about 3 minutes.
