Sweet Potato Casserole

Ingredients:

  • 3 lbs medium-size sweet potatoes
  • 1/2 cup firmly packed light brown sugar
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 cup milk
  • 2 tbsp firmly packed brown sugar

Directions:

  1. In large saucepan, cook sweet potatoes in boiling salted water to cover.
  2. Simmer till tender,about 15 min.
  3. Then drain.
  4. Peel sweet potatoes and mash.
  5. Stir in 1/2 cup brown sugar,butter,cinnamon,nutmeg,and salt.
  6. Mix Well.
  7. Blend in milk.
  8. Pour seasoned sweet potato mixture into buttered 1 1/2 quart casserole dish or buttered individual bakers.
  9. Sprinkle with remaining 2 Tablespoons brown sugar.
  10. Bake in center of oven to 400 degrees for 30 min.
  11. Or until heated through.
