Broccoli Soup With Creme Fraiche

Ingredients:

  • 1 liter chicken stock
  • 250 g broccoli
  • 200 g carrots
  • 100 g potatoes
  • 1 medium onion
  • 1/2 tsp cumin
  • 1 1/2 tsp coriander
  • 1/4 tsp salt
  • 1/4 cup creme fraiche

Directions:

  1. Put first eight ingredients in pot and bring to the boil.
  2. Turn down the heat and simmer for as long as it takes for the vegetables to soften then allow to cool.
  3. Blend till smooth.
  4. Reheat and serve with the creme fraiche.
