Butternut Squash Soup

Ingredients:

  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 medium squash
  • 2 large carrots
  • 1 large potato
  • 1 medium onion
  • 1/2 tsp paprika

Directions:

  1. Heat oil & spices 30 secs
  2. Add chopped up vegatables, cook for 2 mins
  3. Add stock (2 pints)
  4. Simmer 45 mins
  5. Blend til smooth
