Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup packed brown sugar, divided
  • 2 eggs
  • 2/3 cup milk
  • 1/2 cup vegetable oil
  • 2/3 cup raisins

Directions:

  1. Preheat oven to 400°; line 12-cup muffin pan with paper liners.
  2. In a large bowl, whisk together the flour, oats, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together 3/4 cup of brown sugar, eggs, yogurt, milk, and oil until well blended.
  4. Add the egg mixture to the flour mixture and stir until just blended; gently fold in raisins.
  5. Divide batter equally among prepared muffin cups; sprinkle with the remaining brown sugar.
  6. Bake in a preheated oven for 25-30 minutes or until tops are golden and a pick comes out clean.
  7. Let cool in pan on a wire rack for 3 minutes, then transfer to the rack to cool.
