Ingredients:

  • 1/4 cup apple juice
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 4 tsp honey
  • 1 tbsp water

Directions:

  1. Rinse blueberries in a colander and set aside to drain. Combine honey, apple juice, water, cinnamon and ginger in small saucepan. Simmer for 1 minute to dissolve honey. Add blueberries and lemon rind. Simmer for 2 to 3 minutes or until berries are pulpy.
