Blueberry Banana Bread (Lower Fat)

Ingredients:

  • 3 cups flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup sugar
  • 1/2 cup packed brown sugar
  • 4 tbsp oil
  • 2 tsp vanilla
  • 2 eggs
  • 1/3 cup milk
  • 3 tbsp milk
  • 2 cups blueberries

Directions:

  1. Preheat the oven to 350.
  2. Whisk dry ingredients together except the sugar.
  3. Beat sugar, oil, vanilla, eggs, and milk together (all of the milk).
  4. Beat in bananas.
  5. Combine wet and dry and mix until combined well. fold in blueberries, pecans and coconut.
  6. Pour into 2 greased loaf pans.
  7. Bake 50-60 minutes.
  8. Cool on racks and store covered in the refrigerator.
