Blender Potato Pancakes

Ingredients:

  • 2 eggs
  • 1/4 flour
  • 1 small onion quatered
  • 1 tsp salt
  • 1/4 tsp baking powder

Directions:

  1. Put all in blender, press chop 10 seconds. Stop. Use spatula. Push mixture down blend again till blended
  2. Fry in hot oil. make pancakes thin.
  3. Serve with applesauce and sour cream.
