Ingredients:

  1. In a large pot of salted water cook the roughly diced potatos, I leave the skins on but it's up to you. (you can also put the eggs into the same pot to boil them it cuts down on pots and time.)
  2. Cook off the diced bacon.
  3. In a large serving bowl add the still hot drained potatos (it's important that the potatos are still hot, it helps the flavours meld together.)
  4. Add in the cooked bacon, diced pickles and diced hardboiled eggs stir through gently.
  5. Add 1/4 cup of fresh dill and then the same of chives, the mayo and sour cream stir together.
  6. (greek yogurt is also a good substitute for the sour cream) can be served warm or chilled.
